Thin Mint Parfaits
These mint parfaits are a simple delicious treat! Parfaits are a great dessert that will satisfy even the most picky eater. A parfait could be made with ice cream, pudding, custard or jello. You can add any type of topping you desire like berries, cake, chocolate, nuts, or candy. They are extremely versatile and fun to make!!

This recipe is for a Mint Chocolate Parfait. My father bought girl scout cookie thin mints from our neighbor and decided that they would be the perfect staple for our parfaits.
Ingredients:
1/2 quart heavy whipping cream
1 tbsp sugar
1 tsp vanilla
1/3 cup chocolate chips or melting chocolate
one box thin mint cookies
vanilla ice cream
green and white sprinkles (optional)
mint leaves (optional)
mint syrup
P.S The whipping cream, vanilla and sugar is for homemade whipped cream. Feel free to buy whipped cream or cool whip.
Step One: Gather all of your ingredients and materials for the parfait. Look for a glass cup or jar to use so you can layer the ingredients.


Step Two: Melt the chocolate. Put the chocolate in a flat bowl and melt it in the microwave. You can also use a stovetop. I microwaved the chocolate in 30 second intervals, stirring until it was fully melted.
Step Three: Once you melt the chocolate place the glass rim in the chocolate. This is why a flat bottom works well to evenly coat the rim. Turn the glass back and forth to fully cover the rim in chocolate.

Step Four: Crush one cup of the thin mint cookies. I used a food processor but you can use a mallet or even your fingers. The food processor finely grinds the cookies. You can decide the thickness of your crushed cookies.

Step Five: Combine the heavy whipping cream, vanilla, and sugar in a blender to make whipped cream. Whip the mixture with a blender or electric mixer until you get the desired whipped cream consistence. You can use store bought whipped cream or cool whip.

Step Six: Start to layer the parfait with your ingredients. The order I did was ice cream, cookie crumbles, syrup, whipped cream and then cookie crumble. Repeat the layering process until you fill the cup.
Step Seven: Finish with the whipped cream on top. Sprinkle green and white sprinkles along with the cookie crumble on top of the whipped cream. Add a thin mint cookie and a mint leaf as a garnish.
TIP: We used a frosting gun for the whipped cream to easily spread and layer it.
Now you have a delicious treat!!
